Recipe 1: Tuna Salad

INGREDIENTS:

2 cans of chunk tuna/packed in water

2 tsp of Grainy Dijon mustard

2 chopped spring onion

1 finely diced celery

1/2 a cucumber finely chopped

Juice of half a lemon

3 tbs of olive oil

Salt & pepper to taste

Method

Drain Tuna. Mix all ingredients together in a bowl. Divide mixture in 2-3 equal portions.

Enjoy on a slice of whole grain bread or whole grain wrap or on top of mixed greens.
