INGREDIENTS:
4 chicken breasts
80ml fresh lemon juice
80ml of fresh orange juice
2 tbsp lemon zest
2 cloves of garlic crushed
3 sprigs fresh thyme
8ml cup olive oil
salt and pepper to taste
2 avocados - sliced into wedges.
Method
Place all ingredients except the avocado into an air-tight container and marinade chicken breast for at least 6 hours or overnight - trying to turn occasionally. Heat grill. Grill chicken breast, making sure not to overcook - about 5 min per side depending on thickness.
Serve with 1/2 a sliced avocado (sprinkled lightly with some salt) and a side of steamed vegetables, or a side salad.
