INGREDIENTS:
850g beef or chicken breast, cut 1/4-1/2 inch thick
Marinade:
5 tbsp. olive oil
Juice of 1 lemon or lime
4 garlic cloves, peeled & mashed
1 tsp. chilli powder
1 tsp. dried thyme
1 tsp. dried oregano
Vegetables:
1 red pepper, cored & sliced into thin strips
1/2 white onion, sliced into thin wedges
Method
Mix oil, lemon or lime juice, chilli, thyme and oregano. Place chicken in marinade and put in the fridge for several hours or just 1 hour if that's all you have. Remove chicken from the marinade.
In a heavy pan sauté the meat until almost fully cooked, about 3 min per side. Add the onions to the pan and sauté for about 3 more minutes, then add the peppers and sauté for 2 more minutes. Serve with whole wheat tortillas or organic soft corn tortillas and a side of guacamole, grated organic cheese (optional) and organic sour cream or plain yoghurt.
