INGREDIENTS:
4 pork chops, thick cut works best
125g coriander chopped
3 tbsp. mint, chopped
2 tbsp. ginger, minced
2 tbsp. garlic, minced
3 tbsp. lemongrass, finely chopped
2 tbsp. lime zest
1 tsp. honey
120ml fish sauce
60ml soy sauce
60ml fresh orange juice, (approx 1/2 an orange)
1 tbsp. olive oil
Method
Combine coriander, mint, ginger, garlic, lemongrass and lime zest. Stir in the honey, fish sauce, soy sauce, orange juice, and olive oil. Pour over pork chops and marinate for several hours or overnight, turning the pork chops at least once for even marinating. Remove the pork chops from liquid before cooking, and throw out the liquid. Heat your grill or pan on med-high heat. Sear the chops for about 2 min per side. Then lower the heat and cook for another 3 min per side. Serve with salad, quinoa or rice.
